Maid of Honor Tarts

Preparation Instructions:Beat butter and sugar together - add rind and juice. Beat well, add flour, salt and baking powder. Line small tart pans with pastry. Into each shell put 2 teaspoons apricot jam. Cover this with good spoonful of the above cake mixture. Bake in 375 degree oven until done (about 20 - 25 minutes). Ice with butter icing if desired.
