Maid of Honor Tarts

AmountIngredient
 Pastry to line tart pans
4 tablespoonsbutter
4 tablespoonssugar
1egg
1lemon (grated rind)
1 teaspoonlemon juice
3/4 cupflour
1 teaspoonbaking powder
1/2 teaspoonsalt
 Apricot jam

Preparation Instructions:

Beat butter and sugar together - add rind and juice. Beat well, add flour, salt and baking powder. Line small tart pans with pastry. Into each shell put 2 teaspoons apricot jam. Cover this with good spoonful of the above cake mixture. Bake in 375 degree oven until done (about 20 - 25 minutes). Ice with butter icing if desired.
