Crustless Potato Spinach Quiche

AmountIngredient
5eggs
4 cups (12 ounce package)frozen hash brown potatoes, loose style, unthawed
2 cupschopped fresh spinach or frozen, loose spinach leaves, unthawed
1green onion, thinly sliced
1/2 cupcottage cheese
1/4 teaspoonsalt
 Freshly ground black pepper
Dashhot pepper sauce, Tabasco
 Paprika
6 slicesbacon, cooked, crumbled

Preparation Instructions:

1. In a large mixing bowl, combine eggs, potatoes, spinach, onion, cottage cheese, salt, pepper and liquid hot pepper sauce. Mix well.
2. Butter a 9 inch pie or quiche pan. Turn mixture into the pan. Sprinkle with paprika.
3. Bake at 350 degrees for 30 minutes until quiche is almost set.
4. Remove from oven . Sprinkle with bacon. Return to oven for 5 minutes.
5. Remove. Let stand 5 minutes before serving.
