Maid of Honor Tarts

AmountIngredient
 Pastry to line tart tins
 Apricot jam
1/2 cupbutter
1/4 cupsugar
1egg
1/3 cuprice flour
1/3 cupfine ground almonds
1/2 teaspoonlemon juice
1/2 teaspoonlemon rind
1 teaspoonalmond flavoring

Preparation Instructions:

Cream butter and sugar; add egg, lemon juice, rind and almond extract. Beat until smooth and creamy. Add the rest of the ingredients.
Place 1 teaspoon apricot jam into each tart pan lined with pastry.
Spoon above cake filling into tart 1/2 to 2/3 full. Bake at 375 degrees for 22 - 25 minutes.
Ice with butter icing if desired.
