Curried Eggs Over Chow Mein Noodles

AmountIngredient
1/2 cupchopped green pepper
1/4 cupchopped onion
1 to 2 teaspoonscurry powder
2 tablespoonsmargarine or butter
3 tablespoonsall-purpose flour
2 teaspoonsinstant chicken bouillon granules
1/8 teaspoonpepper
2 1/4 cupsmilk
6hard-cooked eggs
6 slicesbacon, crisp-cooked, drained and crumbled
3 ounce canchow mein noodles or 6 ounces spaghetti, cooked
2 tablespoonssnipped parsley

Preparation Instructions:

In a large saucepan cook green pepper, onion, and curry powder in margarine or butter till vegetables are tender but not brown. Stir in flour, bouillon granules, and pepper. Add milk all at once. Cook and stir till mixture is thickened and bubbly. Cook and stir for 1 minute more.

Slice eggs. Fold eggs and bacon into sauce; heat through. Serve over chow mein noodles or hot spaghetti. Sprinkle with parsley. Serve with apple wedges if desired. Makes 4 servings.
