Marky's Birthday Cake

AmountIngredient
Cake: 
1/2 cupsoftened butter or margarine
1 3/4 cupsall-purpose flour
2 teaspoonsbaking powder
1/4 teaspoonbaking soda
1/2 teaspoonsalt
1 1/2 cupsgranulated sugar
1 1/4 cupsundiluted evaporated milk
1 teaspoonvanilla extract
2eggs
2 squaresunsweetened chocolate, melted
Coconut Frosting: 
1 1/2 cupsgranulated sugar
1/3 cupwater
2egg whites
1/4 teaspooncream of tartar
1/4 teaspoonsalt
1/4 teaspooncoconut extract
1 1/2 cupsshredded, fresh coconut or 4 ounce package coconut

Preparation Instructions:

1. Beat butter until creamy.
2. Combine the flour, baking powder, baking soda, salt and sugar. Add to butter with 1 cup undiluted evaporated milk. Beat for 2 minutes.
3. Add the remaining milk, vanilla, eggs and melted chocolate. Beat for another minute.
4. Pour batter into 2 greased 9 inch round cake pans lined on bottom with waxed paper.
5. Bake at 350 degrees for 25 minutes or until tester comes out clean. Cool on cake racks in pans.
6. For frosting, combine sugar, water, egg whites, cream of tartar, salt and coconut extract in top of double boiler. Beat with hand mixer until blended.
7. Place over boiling water. Beat about 7 minutes or until frosting thickens and holds peak. Remove from heat. Beat until cooled.
8. Spread in between layers and over tops and sides. Sprinkle with coconut. Decorate with candles.
