Peanut Crusted Baked Chicken

Peanut Crusted Baked Chicken

AmountIngredient
1broiling chicken, quartered, about 3 pounds
1 cup (8 ounces)plain yogurt
4 tablespoonsbutter or margarine, melted
2 teaspoonsdried thyme leaves
1/2 teaspoonground black pepper
1 to 1 1/4 cupsground dry roasted peanuts
1/8 teaspooncayenne pepper

Preparation Tips:

1. Wash chicken. Pat dry. Place into a heavy duty plastic bag. Pour yogurt over the chicken. Marinate overnight in refrigerator.
2. Remove chicken from refrigerator. Place on a sheet of waxed paper.
3. Combine the butter, thyme and black pepper. Brush chicken on all sides with the mixture.
4. Combine the ground peanuts and cayenne pepper. Roll chicken pieces in the mixture. Place on a roasting pan.
5. Bake chicken at 350 degrees for 40 to 45 minutes or until chicken is done and liquids run clear when tested.
