Beer Chicken

AmountIngredient
1chicken, 3 pounds, cut-up
2 tablespoonsvegetable oil
1 cupchopped red onion
1/2 cupchopped celery
2 clovesgarlic, minced
1 canbeer
Dashsalt
Dashpepper

Preparation Instructions:

1. Rinse chicken pieces with cool water. Pat dry with paper towels.
2. In a large skillet, heat the oil.
3. Brown chicken pieces on all sides.
4. Sprinkle chopped onion, celery, garlic, salt and pepper over chicken.
5. Add enough beer to barely cover chicken.
6. Cover. Simmer for 30 minutes or until chicken is done to your liking. Juices should run clear when pierced with a fork.
7. Serve hot with extra celery sprinkled over the top. Serves 4.
