Apricot Conserve

AmountIngredient
1 1/2 cupschopped dried apricots
1/2 cupgolden raisins
2 cupswater
250 ml (8 ounces)apricot nectar in Tetra Pak packaging
250 ml (8 ounces)100% orange juice in Tetra Pak packaging
1 3/4 cupsgranulated sugar
2 tablespoonsamaretto (optional)

Preparation Instructions:

1. In a large heavy pot mix the apricots, raisins and water. Let soak for 1 hour.

2. Bring to a boil. Let the fruit boil for 5 minutes uncovered.

3. Add the apricot nectar, orange juice and sugar. Stir well. Bring back to a boil and continue boiling for 25 - 30 minutes or until thick. Stir constantly to prevent sticking.

4. Remove from the heat.

5. Have 3 250 ml (8 ounce) jars with clean lids ready (use jars and lids that have been washed well in very hot, soapy water).

6. Pour the amaretto into the apricot mixture. Stir.

7. Pour the conserve into the jars. Wipe the top of the jars with a clean cloth. Put on the lids.

8. Let conserve cool and then store in the refrigerator for up to 3 months.

9. Serve warm over French toast, ice cream or scones.
