Snapper Dijon

Snapper Dijon

AmountIngredient
4 (4 ounce)red snapper fillets (1/2 inch thick)
1/4 cupDijon mustard
1 tablespoonvinegar
1 tablespoonwater
1/2 teaspoondried whole thyme
1/4 teaspoonpepper
Dashground ginger
1medium tomato, chopped
 Fresh thyme sprigs (optional)

Preparation Instructions:

Cut four (15 inch) pieces of heavy duty aluminum foil. Rinse fillets with cold water; pat dry. Place fillets just off center of each piece of foil. Combine mustard and next 5 ingredients, stirring well; pour evenly over fillets. Top with chopped tomato.
Fold foil over fillets, and securely seal; place on a baking sheet. Bake at 450 degrees for 10 minutes or until fish flakes easily when tested with a fork. Remove fillets from foil; garnish with thyme sprigs, if desired. 4 servings.
Suggested alternates: Cod, grouper, redfish, sea bass.
