Quick 'n' Easy Brown Bread

AmountIngredient
1/2 cupsoy milk
2 tablespoonsvinegar
2 cupswhole wheat flour
1 cupunbleached flour
2 teaspoonsbaking soda
1/2 teaspoonsalt
1/2 cupmolasses
1/2 cupraisins

Preparation Instructions:

Preheat the oven to 325 degrees. Mix the soy milk with vinegar and set aside. In a large bowl, stir the flours, soda and salt together. Add the soy milk mixture and molasses. Stir to mix, then stir in the raisins. Do not overmix. Spoon into a large non-stick or lightly-oiled loaf pan and bake for 1 hour.
