Apple Strudel

AmountIngredient
1 cupfresh bread crumbs (2 slices bread)
1 cupground walnuts
8medium-size cooking apples (McIntosh, Golden Delicious), pared, quartered, cored and thinly sliced (8 cups)
1 cupsugar
1 cupgolden raisins
1 teaspoongrated lemon rind
1 tablespoonlemon juice
1 teaspoonground cinnamon
16strudel or phyllo leaves (from a 16 ounce package)
3/4 cup (1 1/2 sticks)unsalted butter, melted
 Confectioners sugar

Preparation Instructions:

1. Combine bread crumbs and walnuts in a large skillet and stir over medium-high heat until crumbs and nuts are golden, about 5 minutes. Remove from heat.
2. Combine apples, sugar, raisins, lemon rind, lemon juice and cinnamon in a large bowl.
3. Place 4 strudel leaves on a clean towel; place another 4 leaves overlapping to form an 18 x 18 inch square of dough.
4. Brush dough completely with some of the melted butter. Sprinkle half of the crumb-nut mixture over entire surface.
5. Spoon half of the apple mixture in an even row down one side of the dough, 2 inches in from edges.
6. Using the towel, lift dough up and over filling. Fold the two adjacent sides of the dough toward center, in order to completely enclosed the apple filling.
7. Continue rolling strudel, aided by towel; allow it to roll over and over on itself until completely rolled. (You will have a 15 x 3 inch roll.) Preheat oven to 400 degrees.
8. Carefully ease filled roll onto a jelly roll pan; repeat for remaining apple strudel.
9. Bake in a preheated hot oven for 35 minutes, brushing several times with remaining butter.
10. Allow strudel to cool 15 minutes before removing to serving board. Sprinkle with confectioners' sugar.
