Pasta Twists with Fresh Tomatoes, Basil, and Garlic

AmountIngredient
4medium-size ripe tomatoes, diced
125 ml / 1/2 cupminced basil
2 clovesgarlic, minced
30 ml / 2 tablespoonslemon juice
125 ml / 1/2 cupolive oil
3 ml / 3/4 teaspoonssalt, or to taste
1 ml / 1/4 teaspoonblack pepper
500 g / 1 poundpasta twists or linguine

Preparation Instructions:

In a medium-size bowl, mix all of the ingredients except the pasta. Cover and let sit at room temperature for at least 2 and up to 6 hours.

Cook the pastap according to package directions until al dente. Drain, toss with the sauce, and serve immediately. Serve as a first course, or present it as the main course, followed by cheese and a green salad. Makes 4 servings as an entree, 6 as a first course.
