Tuna and Pepper Panini Melt

AmountIngredient
2 cans (each 6 ounces/170g)tuna, drained
Halfsweet red pepper, diced
1 stalkcelery
2green onions
2 tablespoonslight mayonnaise
2 tablespoonsplain yogurt or sour cream
1 tablespoondrained capers
1/2 teaspoonground cumin
1/2 teaspoonpepper
1/4 teaspoonsalt
1/4 teaspooncayenne pepper
4soft panini (Italian) buns
1/2 cupshredded cheddar or Swiss cheese

Preparation Instructions:

In bowl, mix together tuna, red pepper, celery, green onions, mayonnaise, plain yogurt, capers, cumin, pepper, salt and cayenne pepper.

Cut buns in half horizontally; spread tuna mixture evenly over bottom half of each. Sprinkle each evenly with cheese. Replace bun top.

In nonstick skillet or grill pan or on grill, cook sandwiches over medium heat, pressing often to flatten and turning once, for about 5 minutes or until crusty and cheese is melted. Makes 4 servings.
