Saturday Supper Pie

AmountIngredient
1 1/2 cupsall-purpose flour
1/2 cupchilled butter or margarine, cut up
3 tablespoonsice cold water
Filling: 
1/2 poundpork sausage or lean ground beef
3/4 cupchopped onion
1 teaspoondried oregano leaves
1/2 teaspoonsalt
1/2 teaspoonblack pepper
1/8 teaspoonred pepper flakes, optional
4eggs
1/2 cupmilk
1 cupshredded Monterey Jack cheese
2/3 cupcanned pizza sauce
2 tablespoonsgrated Parmesan cheese

Preparation Instructions:

1. To prepare the crust, measure flour and butter into work bowl of food processor or into a mixing bowl.

2. Using on-off pulses, or using a pastry blender, cut butter into the flour until crumbly. Add just enough water, stirring with a fork, until mixture is the texture of coarse cottage cheese.

3. Spread over bottom of 9 inch pie pan. Press evenly over bottom and sides. Crimp edges.

4. Bake at 450 degrees for 7 minutes or just until lightly browned. Reduce temperature to 350 degrees.

5. In frying pan, brown the meat and onion. Drain. Add the oregano, salt, pepper and pepper flakes.

6. Beat eggs and milk together. Add cheese and meat. Pour into pastry shell.

7. Bake at 350 degrees for 30 minutes or until a knife inserted in the center comes out clean.

8. Spread top with pizza sauce. Sprinkle with grated Parmesan cheese.

Good served with: Mixed green salad and hot rolls; fresh fruit is good for dessert.
