Double Peanut Butter Cookies

AmountIngredient
1 1/2 cupsall-purpose flour
1/2 teaspoonbaking soda
1/4 teaspoonsalt
1/2 cupbutter or margarine
1/2 cupcreamy peanut butter
1/3 cupsugar
1/3 cuppacked brown sugar
3 tablespoonsorange juice
1/3 cupcreamy peanut butter

Preparation Instructions:

Stir together flour, soda, and salt. In a mixer bowl beat butter or margarine and the 1/2 cup peanut butter for 30 seconds. Add sugar and brown sugar and beat till fluffy. Add dry ingredients and orange juice to beaten mixture and beat till well blended. Shape into a 7 inch long roll. Wrap in waxed paper or clear plastic wrap; chill several hours or overnight.

Cut into 1/8 to 14 inch slices. With a spatula carefully lift half the slices onto an ungreased cookie sheet. Place about 1 teaspoon of the remaining peanut butter on each slice. Cover with the remaining slices. Let stand till softened; seal edges with a fork. Bake in a 350 degree oven about 15 minutes or till done. Makes 14 to 28.
