Chunky Rhubarb Applesauce

AmountIngredient
2Golden Delicious apples (unpeeled), chopped
1 cupchopped frozen or fresh rhubarb
1/2 cupfrozen or fresh strawberries
1/4 cupgranulated sugar
2 teaspoonsgrated orange rind
1/3 cuporange juice

Preparation Instructions:

In saucepan over medium heat, combine apples and 1 tablespoon water; cook, stirring occasionally, for 5 minutes.

Stir in rhubarb, strawberries, sugar, and orange rind and juice; bring to boil. Reduce heat and simmer, stirring often, for 10 minutes or until fruit is softened. Serve warm or cool.

Makes 2 1/2 cups.
