Banana Nut Bread

AmountIngredient
2 1/2 cupssifted all-purpose flour
3 teaspoonsbaking powder
1/2 teaspoonsalt
1/4 teaspoonbaking soda
1/2 cup (1stick)butter or margarine
1 cupsugar
3eggs
3medium-size ripe bananas, peeled and mashed (1 cup)
1/4 cupwheat germ
1/2 cupfinely chopped walnuts
1/2 cupraisins, chopped

Preparation Instructions:

1. Sift flour, baking powder, salt and baking soda onto wax paper. Grease a 9x5x3 inch loaf pan; line bottom with wax paper; grease paper.

2. Beat butter, sugar and eggs in a large bowl until light and fluffy; stir in bananas. Preheat oven to 325 degrees.

3. Stir in flour mixture; fold in wheat germ, walnuts and raisins. Pour into prepared loaf pan.

4. Bake in a preheated slow oven (325 degrees) for 1 hour and 20 minutes, or until a wooden pick inserted near the center comes out clean. Cool in pan on a wire rack 10 minutes. Loosen around edges with knife; turn out onto rack; peel off wax paper. Let cool completely. Wrap in aluminum foil and store over night for easier slicing.
