Bean and Pasta Soup

AmountIngredient
1 cupdry great northern beans
16 ounce cantomatoes, cut up
2medium carrots, chopped
1medium onion, chopped
3 tablespoonsinstant beef bouillon granules
2 clovesgarlic, minced
1 teaspoondried basil, crushed
1/2 cupsmall pasta

Preparation Instructions:

Rinse beans. In Dutch oven combine beans and 8 cups water. Bring to boiling; reduce heat and simmer for 2 minutes. Remove from heat; cover and let stand 1 hour. (Or, cover and soak in the water overnight.) Do not drain. Stir in undrained tomatoes, carrots, onion, bouillon granules, garlic, and basil. Cover and simmer about 1 1/2 hours or till beans are tender. Mash beans slightly. Bring to boiling; stir in pasta. Cook, uncovered, just till pasta is tender. Makes 6 main dish or 10 side dish servings.
