Broccoli with Peanuts

AmountIngredient
1 1/2 poundsbroccoli
 Salt
2 ouncesbutter
3 ouncesunsalted peanuts
1 teaspoonlemon juice

Preparation Instructions:

Rinse the broccoli and cut off the coarse or damaged stalks and leaves. Bring a pan with a little water to the boil, add the broccoli, stems down so that the stems boil and the heads steam, and cook them for about 5 minutes or until tender but not squashy. Meanwhile, melt the butter in a frying pan, add the nuts and lemon juice and stir them over a high heat until they are browned on all sides. Drain the broccoli well, transfer it to a serving dish and spoon on the nuts. Serve at once.

Cook's tip: Cauliflower is equally good served this way.
