Cellini Pies

AmountIngredient
 Golden Pastry
2small cloves garlic, minced
2medium onions, minced
8thin slices Swiss cheese
8small tomatoes, sliced
 Flour
24anchovies, cut up
 Capers
2 cupswhipping cream

Preparation Instructions:

Heat oven to 400 degrees. Prepare pastry. Mix garlic and onions; spread in pastry-lined tart pans. Cover with cheese slices. Dip tomatoes into flour; place on cheese. Sprinkle with anchovies and capers. Pour cream over pies.

Cover edges of pastry with 1 1/2 inch strips of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 25 to 30 minutes. 8 servings.
