Lazy Lasagna Stuffed Baked Potato

AmountIngredient
1potato
2 tablespoonscottage cheese or ricotta cheese
1/4 cupfrozen chopped broccoli
 Grated Parmesan cheese
Pinchsalt
Pinchpepper
1/4 cuppasta sauce

Preparation Instructions:

Scrub potato; prick in several places. Bake in 400 degree oven for 45 minutes or until potato yields to gentle pressure. Or microwave at High for 4 minutes. Cut thin slice from top; scoop out flesh, leaving 1/2 inch thick wall. Sprinkle shell with salt and pepper.

Mix scooped out flesh with cottage cheese or ricotta cheese.

Stir in broccoli; sprinkle with Parmesan cheese and salt and pepper.

Scoop flesh into shell. Top with hot pasta sauce and sprinkle with Parmesan cheese.

Makes 1 serving.
