Bean & Salsa Dip

AmountIngredient
3 slicesbacon, cut up
1small onion, chopped
16 ounce candark red kidney beans, rinsed and drained, divided
2/3 cupsalsa
1small tomato, seeded and chopped

Preparation Instructions:

Place bacon in 1 quart casserole. Cover. Microwave at High for 4 to 6 minutes, or until bacon is brown, stirring once. With slotted spoon, remove bacon to paper towels. Crumble and set aside.

Add onion to bacon fat. Re-cover. Microwave at High for 1 1/2 to 2 1/2 minutes, or until onion is tender. Mash 1/3 cup beans. Add mashed beans and salsa to onion. Mix well. Add bacon, remaining beans and tomato. Mix well. Re-cover. Microwave at High for 3 to 5 minutes, or until dip is hot. Top with sour cream, if desired. Serve warm with tortilla chips.
