Beef and Vegetable Sauce on Spaghetti

AmountIngredient
2 tablespoonsvegetable oil
2 clovesgarlic, minced
1medium onion, chopped
2 stalkscelery, diced
1/2 poundmedium lean ground beef
28 ounce cantomatoes
1/3 cuptomato paste
2medium carrots sliced thin
 Salt, to taste
 Pepper to taste
1 teaspoonbasil
2 cupsshredded cabbage
2 tablespoonsminced parsley
350 gramsCatelli spaghetti (a handful 1 1/2" in diameter)

Preparation Instructions:

Saute garlic, onion and celery in oil until tender. Add meat and brown; remove excess fat. Crush tomatoes with potato masher and add to meat with tomato paste, carrots, salt, pepper and basil. Bring to a boil, cover and simmer for 20 minutes stirring frequently. Add cabbage and parsley and continue cooking until cabbage is tender, 20 to 30 minutes. Taste for seasoning. Meanwhile, cook spaghetti according to package directions. Serve sauce over spaghetti.
