Chicken Stir-Fry

AmountIngredient
3 tablespoonsvegetable oil, divided
1 poundboneless, skinless chicken breasts, cut into thin strips
4 cupsvegetables (broccoli flowerets, green onion, celery, carrot)
1 clovegarlic, minced
1 canCampbell's Chicken Broth
1/2 cupwater
1 tablespooncornstarch
1 tablespoonsoya sauce

Preparation Instructions:

In skillet, in 2 tablespoons hot oil, stir-fry chicken until no longer pink. Remove; set aside.

In 1 tablespoon oil, stir-fry vegetables and garlic until tender-crisp.

Combine remaining ingredients and add to skillet with chicken. Cook until mixture boils and thickens, stirring often. Serve over hot cooked rice.

Makes 4 servings.
