Macadamia Chip Cookies

AmountIngredient
1 cupbutter or margarine, softened
3/4 cuppacked brown sugar
1/4 cupsugar
2eggs
1 teaspoonvanilla extract
2 1/4 cupsall-purpose flour
3.4 ounce packageinstant vanilla pudding
1 teaspoonbaking soda
1/4 teaspoonsalt
10 to 12 ounce packagevanilla or white chips
2 jars (3 1/4 ounces each)macadamia nuts, chopped
1/2 cupchopped peanut brittle

Preparation Instructions:

In a mixing bowl, cream butter and sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, dry pudding mix, baking soda, and salt; gradually add to creamed mixture and mix well. Stir in chips, nuts, and peanut brittle.

Drop by rounded tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Remove to wire racks to cool.

Yield: 5 1/2 dozen.
