Beet and Pineapple Mold

AmountIngredient
16 ounce candiced or shoestring beets
8 1/4 ounce cancrushed pineapple
6 ounce packagelemon-flavored gelatin
2 cupsboiling water
3 tablespoonslemon juice
Dashsalt
1/2 cupchopped celery

Preparation Instructions:

Drain beets and pineapple, reserving liquids. Combine liquids and add water to make 1 1/2 cups. Dissolve gelatin in boiling water; stir in reserved liquid mixture, lemon juice, and salt. Chill till partially set. Fold in drained beets, pineapple, and chopped celery. Pour gelatin mixture into a 6 1/2 cup mold. Chill till firm. Makes 8 to 10 servings.
