Beet and Pineapple Mold

Preparation Instructions:Drain beets and pineapple, reserving liquids. Combine liquids and add water to make 1 1/2 cups. Dissolve gelatin in boiling water; stir in reserved liquid mixture, lemon juice, and salt. Chill till partially set. Fold in drained beets, pineapple, and chopped celery. Pour gelatin mixture into a 6 1/2 cup mold. Chill till firm. Makes 8 to 10 servings.
