Clam Quiche

AmountIngredient
Crust: 
1 cupbread crumbs
1/4 cupmelted butter
1/4 cupgrated Parmesan cheese
Filling: 
2 cans (8 ounces each)minced clams, undrained
2 tablespoonsbutter or margarine
1medium onion
1 tablespoonall-purpose flour
1/4 cupchopped parsley
1/2 cuphalf-and-half
1/4 cupwhite wine
2eggs
1/2 cupgrated Cheddar cheese
Dashhot pepper sauce

Preparation Instructions:

1. For crust, combine bread crumbs, butter and Parmesan cheese in a bowl, combining well.

2. Press the crumbs into a 9 inch pie or quiche pan.

3. Prebake crust at 350 degrees for 5 minutes. Set aside.

4. For filling, in a saucepan, combine butter and onion. Saute for 5 minutes until onion is soft but not brown.

5. Sprinkle with flour. Stir. Add parsley, half-and-half and wine. Cook for about 3 minutes until thickened. Let cool.

6. Add eggs, Cheddar cheese and hot pepper sauce. Add clams.

7. Pour this mixture into prebaked crust.

8. Bake quiche at 350 degrees for about 20 minutes or until set.

9. Serve immediately or let cool and serve at room temperature.

Good served with: A green salad and/or sliced tomatoes.
