Crusty Baked Catfish

Preparation Instructions:1. Thaw catfish, if frozen. Rinse in cold water. Pat dry with paper towelling.
2. Mix milk and mustard. Dip catfish in the mixture.
3. Roll dipped fish in minced pecans. Place into a shallow, buttered baking dish. Sprinkle with salt and pepper.
4. Bake at 400 degrees for 10 to 12 minutes.
5. Garnish with lemon wedges, if desired.
Tips: If you use fresh catfish for this, you'll need to skin it first. Cat fish is now available frozen in most supermarkets. It has a mild flavor and is great for those who dislike the bones found in most fish.
Good served with: Pan fried potatoes, corn muffins and crisp, fresh coleslaw.
