Spinach-Sole Pinwheels

AmountIngredient
1/2 cupfrozen chopped spinach, thawed and well drained
1/3 cupsoft whole wheat breadcrumbs
2 ounce jarsliced pimiento, drained
2 tablespoonsgrated onion
1 tablespoonfinely chopped pecans
1 teaspoonlemon juice
1/4 teaspoondried whole marjoram
1/4 teaspoonsalt
1/4 teaspoonpepper
4 (4 ounce)sole or flounder fillets
1/4 cupChablis or other dry white wine
1 teaspoongrated lemon rind
 Fresh spinach leaves (optional)
 Lemon wedges (optional)

Preparation Instructions:

Combine first 9 ingredients in a medium bowl; stir well. Spoon 3 tablespoon spinach mixture in center of each fillet; roll up, jellyroll fashion, beginning at narrow end. Secure with a wooden pick. Place rolls, seam side down, in an 11 x 7 x 2 inch baking dish. Combine wine and lemon rind; pour over rolls. Cover with heavy duty plastic wrap and vent. Microwave at High 5 to 7 minutes or until fish flakes easily when tested with a fork. Let stand 1 minute. Remove and discard wooden picks. Slice rolls, and transfer to serving plates. Garnish with spinach leaves and lemon wedges, if desired. 4 servings.
