Garlic Soup

AmountIngredient
3 clovesgarlic, crushed
2 tablespoonsvegetable oil
2 sliceswhite bread, cut into small pieces
4 cupschicken broth
1/2 teaspoonsalt
1/4 teaspoonpepper
1egg, slightly beaten

Preparation Instructions:

Cook and stir garlic in oil in 3 quart saucepan until brown; add bread. Cook and stir until light brown. Stir in chicken broth, salt and pepper. Heat to boiling; reduce heat. Cover and simmer 20 minutes.

Gradually stir at least half of the hot mixture into egg. Blend into hot mixture in saucepan. Boil and stir 1 minute. Sprinkle with snipped parsley if desired.

8 servings (about 1/2 cup each)
