Zucchini Frittata

Preparation Tips:Cut zucchini into thin slices.
Slice onion thinly.
Mince garlic.
Melt butter over medium-high heat in 10" skillet that can be put under broiler.
Add onion and garlic to skillet, saute, stirring constantly, for 1 minute.
Add zucchini, saute 1 minute.
Cover skillet, reduce heat to medium, cook 4 minutes, until tender.
Remove cover, saute another minute, until excess moisture evaporates.
Meanwhile, preheat broiler.
In large bowl, combine eggs, 6 tablespoons Parmesan cheese, salt, pepper; beat with whisk until blended.
Now pour egg mixture over zucchini and onions in skillet. Let frittata cook 4 - 5 minutes over medium heat until egg at outer edge begins to cook.
Lift one side of frittata with spatula to check doneness.
When underside is golden but top is still somewhat liquid, turn off heat.
Sprinkle frittata with 2 tablespoons Parmesan cheese.
Broil about 6" from heat for 1 - 2 minutes, until top is cooked and golden brown.
Serve from pan or slide onto serving plate, cut into wedges.
Makes 4 servings.
