Pasta with Vegetables and Peanut Sauce

Preparation Instructions:In a food processor, process the garlic, lemon juice, brown sugar, tamari or soy sauce, 1/2 cup broth and 1/2 the amount of peanut butter. Set aside. Pour oil into a saucepan. Add chopped onion and saute on low heat for about one minute. Add the remaining broth and bring to a gentle boil. Pour in the peanut butter mixture and the rest of the peanut butter. Mix until smooth with a whisk on low heat. Add shredded carrots, chopped red peppers and bock choy. Slice chili in half and add at this time. Remove from heat. As the vegetables are cooking, cook pasta in boiling water for about 10 - 12 minutes, or until tender. Drain in a separate serving bowl, toss in the vegetables, sauce and chopped fresh parsley. Mix and serve.
Yield: 4 - 6 servings.
