Fondue

AmountIngredient
1 clovegarlic
1/2 pintdry cider
8 ouncesEmmenthal cheese
8 ouncesGruyere cheese
2 teaspoonscornflour
1 tablespoonbrandy
 Pepper
 Ground nutmeg
 Cubes of crusty bread

Preparation Instructions:

Peel the clove of garlic and rub it round the inside of a flameproof dish. Warm the dish over a gentle heat, then pour in the cider. Grate the cheeses and toss in the cornflour. Add to the dish and continue to heat gently, stirring until the cheese has melted and formed a smooth sauce. Stir in the brandy, pepper and ground nutmeg to taste. Serve with cubes of crusty bread for each person to dip into fondue, coat with the sauce and eat. Makes 4 to 6 servings.
