Carrot with Orange Soup

Preparation Instructions:In deep 2 litre microwave safe bowl, place butter or margarine and onion. Cook on high, 100% power, for 45 seconds or until butter or margarine has melted. To onion, add carrots, orange zest and 120 ml of the stock. Cook on high for 12 minutes, or until the carrots are tender, stirring twice. In food processor with knife blade attached or in blender, process carrot mixture until smooth. Return carrot mixture to bowl; stir in the remaining stock, salt and pepper. Cook covered on high for 4 minutes, or until piping hot, stirring halfway through cooking.
Comments from David: Serve hot, or cover and refrigerate to serve chilled later. Optional is the whipping cream and parsley.
