Pecan Waffles

AmountIngredient
1 1/2 cupsall-purpose flour
1/4 cupsugar
2 teaspoonsbaking powder
1/2 teaspoonsalt
2eggs, separated
1 1/2 cupsmilk
1/4 cupvegetable oil
1/2 cupfinely chopped pecans or walnuts
 Softened butter
 Syrup

Preparation Instructions:

Mix flour, sugar, baking powder, and salt in a medium-size bowl with a wire whisk until light an thoroughly combined. (Using a wire whisk to blend the dry ingredients makes sifting unnecessary in this case.)

Beat egg yolks in a large bowl until thick and pale. Stir in milk, oil, and flour mixture just until moistened. Stir in pecans.

In a small, grease-free bowl, beat egg whites until soft peaks form when beaters are lifted. Fold into batter.

Bake waffles according to directions that accompanied your waffle iron, or use about 1 1/3 cups batter to make one 9 inch square waffle.

Serve immediately with softened butter and syrup.

6. Pour into baked crust. Sprinkle with remaining crumbs.

Makes three 9 inch or two 4 inch waffles.
