Artichoke Pudding

Preparation Instructions:Preheat the oven to 400 degrees F. Grease a 9" round pan baking dish or one of similar size. Simmer onions and garlic in oil, until soft. Add oregano. Process only artichoke's heart, soaked bread and onion mixture. Pour in a bowl and incorporate Parmesan cheese, salt, pepper, and at the end add beaten eggs. Sprinkle baking pan with breadcrumbs, pour mixture, over top breadcrumbs. Bake for 30 - 35 minutes or until done. Serve hot.
