Buttered Brazil Nuts

Buttered Brazil Nuts

AmountIngredient
3 cupssugar
1 cupwater
1 tablespoonliquid glucose
30 grams (1 ounce)butter
2 tablespoonsrum
250 grams (8 ounces)shelled brazil nuts

Preparation Instructions:

1. Dissolve sugar in water and glucose over low heat. Brush pan sides with wet brush to dissolve any sugar grains.

2. Bring to boil, boil steadily to 235 degrees F or when a small quantity of syrup, dropped into cold water, moulds easily with the fingers into a soft ball. Do not stir.

3. Add butter and rum, boil again without stirring until mixture is light golden brown, approximately 15 minutes. Remove from heat, drop in nuts; do not stir. Return to heat for 1 minute to reheat toffee.

4. So not to stir nuts into toffee, just tilt pan to cover nuts with toffee. Working quickly, lift out nuts one at a time, place on greased oven pan to set.
