Sorrel Drink

Preparation Tips:Put water and ginger slices in a large saucepan.
Cover and bring to a boil; boil vigorously for 3 minutes.
Remove saucepan from heat and add sorrel.
Let steep, covered, at room temperature overnight.
Stir in rum and add sugar to taste.
Makes 10 cups.
This recipe can be doubled.
Note: Dried sorrel can be purchased in Jamaican and West Indian food stores.
Sorrel is quite tart, so quite a bit of sugar should be added.
