Scalloped Corn

AmountIngredient
1/4 cupfinely chopped onion
1/4 cupchopped green or sweet red pepper
2 tablespoonsmargarine or butter
1beaten egg
1/2 cupmilk
1/2 cupcoarsely crushed saltine crackers or rich round crackers
1 8-3/4 oz cancream style corn
1 7 oz canwhole kernel corn, drained

Preparation Tips:

Cook onion and sweet pepper in 1 tablespoon of the margarine till tender. Combine egg, milk, 1/3 cup of the crushed crackers, and dash pepper. Stir in onion mixture and corn. Pour into a greased 1-quart casserole. Melt remaining margarine; toss with remaining crumbs. Sprinkle crumb mixture atop corn mixture. Bake in a 350 degree oven about 35 minutes or till a knife inserted near the center comes out clean. Makes 4 servings.
