Caramel Apples with Applejack Foam

    4 medium apples

  2 tablespoons lemon juice

  3/4 cup granulated sugar

  2 tablespoons butter

  Applejack Foam:

  4 egg yolks

  1/4 cup + 2 tablespoons sugar

  1/4 cup applejack or apple brandy

  Toasted almonds, for garnish
