Brown Rice & Shrimp Salad

    1 pound medium shrimp, shelled and deveined

  3 cups cooked rice

  2 cups fresh spinach leaves

  1/2 cup cherry tomatoes

  1 tablespoon green onions

  2 tablespoons white wine vinegar

  1 tablespoon plus 1 1/2 teaspoons low-sodium soy sauce

  1 tablespoon peanut oil

  1/4 teaspoon turmeric

  1/8 teaspoon garlic powder
