  4 shallots or 1 small onion

  3 cloves garlic

  2 tablespoons vegetable oil

  1 teaspoon brown sugar

  1 teaspoon minced gingerroot

  2 tablespoons lime juice

  1/2 teaspoon cinnamon

  1/4 teaspoon nutmeg

  Pinch cloves

  1 fresh, frozen or dried kaffir* lime leaf

  3/4 teaspoon salt

  3/4 teaspoon pepper

  1 cup fresh bread crumbs

  1 1/2 pounds fresh cod or monkfish fillet

  2 green onions

  1 egg white
