  1/4 cup molasses

  3 tablespoons vegetable oil

  2 egg whites

  1/2 cup low-fat (1.5%) buttermilk

  2 inch piece fresh ginger

  1/2 cup confectioners sugar

  2 tablespoons chopped crystallized ginger (optional)
