Grilled Salmon on Peas with Mint Mayonnaise

    6 cups peas, snow peas and/or sugar snap peas

  1/4 cup mayonnaise

  3 tablespoons extra-virgin olive oil

  2 tablespoons chopped mint leaves

  1 teaspoon lemon juice

  1 teaspoon Dijon mustard

  1/2 teaspoon anchovy paste

  4 salmon fillets (with skin), about 6 ounces each

  1/2 teaspoon salt

  1/4 teaspoon pepper

  3 green onions

  Pinch granulated sugar

  Lemon wedges
