  2 tablespoons olive oil or vegetable oil

  1 pound fresh spinach, stems removed or 10 ounce package frozen spinach

  2 tablespoons butter or margarine

  1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil leaves

  2 ounces (1/2 cup) shredded Mozzarella cheese
