Lamb Pepper Stir - Fry

    1 pound lean boneless lamb

  2 cups frozen crinkle-cut sliced carrots

  3/4 cup sliced almonds

  1 tablespoon cooking oil

  3 tablespoons soy sauce

  1 tablespoon dry sherry

  2 teaspoons cornstarch

  1 teaspoon sugar

  1 teaspoon gingerroot or 1/2 teaspoon ground ginger

  1/2 teaspoon crushed red pepper

  4 green onions

  8 1/4 ounce can pineapple chunks

  Rice
