Sausage-Stuffed Manicotti

    3 mild or hot Italian sausages

  1/4 teaspoon fennel seed

  1/4 teaspoon ground nutmeg

  1 cup small curd cottage cheese

  10 ounce package frozen chopped spinach

  1/2 cup (plus a little for topping, optional) grated Parmesan cheese

  1 egg

  Salt

  Pepper

  8 manicotti shells

  15 ounce can Marinara sauce

  4 to 8 slices Monterey Jack cheese
