  1 clove garlic

  2 tablespoons lemon juice

  2 tablespoons fresh coriander

  1 tablespoon lemongrass or grated lemon rind

  1 tablespoon fish sauce (or 1 teaspoon anchovy paste)

  1 teaspoon hot pepper flakes

  1 teaspoon packed brown sugar

  Boston lettuce leaves

  Fresh mint leaves

  1 English cucumber

  1/4 cup rice vinegar

  1 tablespoon granulated sugar

  1 tablespoon Thai or serrano chili pepper

  1/2 teaspoon salt
