Tuna and Pepper Panini Melt

    2 cans (each 6 ounces/170g) tuna

  Half sweet red pepper

  1 stalk celery

  2 green onions

  2 tablespoons light mayonnaise

  2 tablespoons plain yogurt or sour cream

  1 tablespoon capers

  1/2 teaspoon ground cumin

  1/2 teaspoon pepper

  1/4 teaspoon salt

  1/4 teaspoon cayenne pepper

  4 soft panini (Italian) buns

  1/2 cup shredded cheddar or Swiss cheese
