Pasta with Vegetables and Peanut Sauce

    1 pound fettuccine or linguine

  1 1/2 cups carrots

  1 1/2 cups red peppers

  1 cup bok choy

  3/4 cup Adams peanut butter, crunchy

  1 3/4 cups vegetable broth

  1 large clove garlic

  1 small onion

  1 tablespoon brown sugar

  3 tablespoons fresh lemon juice

  1 1/2 tablespoons tamari or low-sodium soy sauce

  1 tablespoon sunflower or olive oil

  2 tablespoons parsley, fresh

  Salt, to taste

  Pepper, to taste

  1 red chili, (optional)
